Projects: July 2012

Gluten free (and then some). Monday, July 30, 2012. We've slowly been working on the kitchen since I removed the hanging cupboards. And last week we had an electrician come in and install can lights in our kitchen. This was one project we didn't feel like tackling ourselves- wiring new lights wasn't something we wanted to mess around with. Bad picture of the old mismatched lights- I forgot to take a picture before I started changing out the lights. The electricians took down the large nipple light (yuck!

GAPS: November 2012
http://1001goals-gaps.blogspot.com/2012_11_01_archive.html
Gluten Free (and then some). Friday, November 30, 2012. GAPS Intro Week 3. Read why we're doing GAPS here. Read about our GAPS Intro Week 1 here. Read about our GAPS Intro Week 2 here. Since we're doing one stage each week, Week 3 = Stage 3. This week we introduced egg whites, soaked and dehydrated pecans (crispy nuts), avocado, and cilantro. Surprisingly, the cilantro did seem to give me a few problems. I'll need to try it again in a few days to make sure whether it's ok or not. I think I've decided to ...

Homeschooling: Cotter Tens Fractal
http://1001goals-homeschooling.blogspot.com/2013/01/cotter-tens-fractal.html
Gluten free (and then some). Tuesday, January 29, 2013. Looks kind of like a Christmas tree. This is something LMS and I did in math (we're using RightStart Math Level B. And is a great way to visualize numbers. The huge triangle is made of 10 smaller triangles. Those triangles are in turn made of 10 smaller triangles, and those triangles are also made of 10 smaller triangles. 1000 small triangles = 100 medium triangles = 10 large triangles = 1 giant triangle. This took a lot of time and a lot of glue st...

Gluten Free (and then some): August 2011
http://1001goals-glutenfree.blogspot.com/2011_08_01_archive.html
Gluten free (and then some). Saturday, August 20, 2011. I've decided to periodically do a post about what we ate on a given day, mostly to demonstrate that we actually do eat well :). Thursday we ate paleo Coconut Flour Waffles. For lunch we had leftover Chicken and Vegetable Lo-Mein. That I made for dinner Tuesday night. I really liked this recipe and while LMS wasn't a big fan, I'm hoping that's just because I've been trying a lot of new recipes lately. For dinner we made Grilled Chicken and Veggies.

Projects: Who am I?
http://1001goals-projects.blogspot.com/p/who-am-i.html
Gluten free (and then some). I'm a thirty-something wife and mother working on accomplishing my goals. Some of them are goals I've had for years, others are more recent additions to my list. Some take a lot of work, others not so much. Either way, I enjoy the feeling of accomplishment as I learn from them and complete them. Me, our Little Miss Sunshine, and Mr. Mellow, who balances me out nicely. I like to make lots of goals, even if I don’t always meet them as quickly as I’d like. The current list of fo...

Gluten Free (and then some): Nightshade Free Sweet Dry Rub
http://1001goals-glutenfree.blogspot.com/2012/09/nightshade-free-sweet-dry-rub.html
Gluten free (and then some). Friday, September 21, 2012. Nightshade Free Sweet Dry Rub. When I made ribs this week, I first had to make the BBQ sauce. And the dry rub. BBQ rubs usually have paprika in them, but paprika is made from peppers and I can't eat it, even in small amounts. Because of the lack of paprika and the presence of black pepper, this rub is a bit peppery instead of spicy. Adapted from a recipe found here. Other ideas are there as well). 6 Tbl brown sugar. 3 Tbl ground black pepper.

Homeschooling: April 2012
http://1001goals-homeschooling.blogspot.com/2012_04_01_archive.html
Gluten free (and then some). Tuesday, April 24, 2012. Using rubberbands to make patterns on the RightStart Math geoboards. Recently I've been thinking about when to end this school year. Initially I wanted to be done with kindergarten by Memorial Day so we could have the whole summer off. But then I reconsidered what our school schedule should be. A traditional 9 months on, 3 months off? I like the idea of not doing schoolwork for 3 months, but didn't like the idea of wasting time doing review in the fall.

Projects: Updated Little Girl's Closet & Room
http://1001goals-projects.blogspot.com/2013/04/updated-little-girls-closet-room.html
Gluten free (and then some). Thursday, April 11, 2013. Updated Little Girl's Closet and Room. This project took awhile (I started LMS' room 2 years ago when we first moved in) and went through a couple of incarnations before it finally got to a point where I can call it finished. The closet is deep on both sides, which caused problems when it came to figuring out the best shelf/closet rod combination. It started out as this:. Not a great before picture, but it's all I've got. Then looked like this:.
