Thursday, May 14, 2015. Today Cooper's class celebrated all of the summer birthdays with an ice cream sundae party. Cooper, Brooks, Taylor, and Anna loved being celebrated early with their school friends. Each mom got to bring a book and read it to the class. Adventures with the Woods. Fun, food, and other random crap. Roasted Vegetables with Israeli Couscous. Recipe I found on epicurious.com. It all turned out quite well! I served the vegetables over the couscous and garnished it with some fresh parsley and shredded parmesan cheese. I think some goat cheese would also work well with this.
