Bread in Mauritania is one of two options: either the wonderful "pain de brousse" that vendors sell on the street while carrying them on a plank on their heads, delicious but uncertain to be found when needed. Or, the air filled unsubstanced plain white generic baguettes, which is why we've turned to making our own bread. We have been making bread using the most fantastic recipe, created by Jim Lahey (of NYC Sullivan Street Bakery). It's called "no-knead bread". Posted by Eloisa Astudillo.

During our trip we hope to work with some schools, meet people and see more of the wonders of the continent. Edith is a teacher with experience teaching all age groups and abilities. While my background is in maintenance, anything from lawn mowers to heavy industrial plants.
