Curried spaghetti squash with chickpeas. In my ever present quest for consuming anti-inflammatory ginger and turmeric, I’ve been currying-up my fall squashes. This recipe is a complete meal, very low in calories, and is delicious cold or hot. It also gets better the longer it sits, so make it early in the week, and enjoy it later on. 1 cup dried chickpeas, rinsed then soaked overnight in double the amount of water, or 1 can chickpeas, rinsed. 1 small red onion or shallot. 1 tsp ground cumin.

While writing an article on B-vitamins, I’ve been exploring recipes that are full of them! Mushrooms are natural sources, and nutritional yeast is a great source of B-12. This mushroom gravy is amazing with any pasta, meatballs, brown rice dishes, and on cauliflower or celery root purée. 1 tsp of butter or earth balance spread. 1 tsp olive oil. Frac14; medium onion, finely chopped. 2 cups sliced mushroom caps (about 1/3 lb). 3 cups vegetable stock. Frac12; cup dry white wine. 3 TBS nutritional yeast.

Probiotic adzuki bean, snap pea, bok choy and charred butternut squash salad. I’ve been mildly obsessed with probiotic foods since deepening my studies in nutrition. I came across a fantastic woman in the Hamptons who is fermenting organic produce and solely running the company Hamptons Brine, Nadia Ernestus. I’ve used her Classic Kvass in this recipe, which not only adds a powerful flavor that completes the salad, but it also gives you all the probiotics you need for the day! Frac12; cup sugar snap peas.

No oil balsamic dressing. This virtually fat free, vegan, no sugar, B12-rich dressing will store for about 2 weeks, and is great on salads, fish, chicken, roasted vegetables, and grain bowls. It’s a modified recipe from the dressing used at whole foods. My personal preference is to use half white balsamic vinegar, and half black balsamic vinegar. 1 cup balsamic vinegar. 3 large pitted dates, roughly chopped. Frac12; cup boiling water. 2 TBS Dijon mustard, preferably whole grain. 1 clove garlic, smashed.

This recipe includes flax seeds for a high ratio of omega-3 fatty acids, and I include amaranth flour, which high in protein, fiber and iron. Bake these for brunch, breakfast or bring to the office as gifts, which will be a welcome, nutritious change of pace from typical high-fat, low nutrient pastries. Yields 6 large, 12 medium muffins. Frac34; cup amaranth flour.

After reading several articles on all of the ingredients in store bought almond milk, which barely includes almonds, I’ve made an effort to make my own nut milks weekly. It’s a very easy process, and is actually cheaper than buying it in the store! You just need a high powered blender like a Vitamix, Nutribullet, Ninja, or the like. Makes 5 cups of milk. Soak 1 cups almonds (or cashews or hazelnuts) in water for an hour at least (more time will make them plumper and easier to blend) with ½ tsp salt.
