County fairs, long hours of daylight, foggy mornings perfect for running that burn off into gorgeous blue skies (thank you, San Francisco), fireworks and fresh fruit. What's not to love? I've been so stoked by the onset of summer that I was inspired to turn a normally winter-y breakfast dish into a fresh summer treat that begs to be served up at your next brunch or "just because" occasion.
