Pinch of freshly grated nutmeg. 8226; Preheat the oven to 180°C/ 350°F/Gas mark 4. Grease a baking dish with oil. 8226; Blanch the courgettes in boiling water for 2 minutes. Cool slightly. 8226; Put the egg yolks, Parmesan and nutmeg in a bowl. Add the courgettes, and mix through. 8226; Beat the egg whites until stiff. Fold into the courgette mixture. 8226; serves 6.

Salt and freshly ground black pepper. 8226; Blend the beans in a food processor until they form a smooth paste. Add the butter, vinegar and bay leaf. Season with salt and pepper. Blend for 2 minutes. Salt and freshly ground. 8226; Bring a large heavy pan of water to the boil, and stir in the rice. Return to the boil and cook for 12–15 minutes until tender. Drain and cool. 8226; Serves 6-8.
