Saturday, June 23, 2012. Goat Cheese and Herb Omelet with Rosemary Toast. Every weekend I make eggs, pancakes or waffles. Sometimes all three! This past weekend, my husband asked for this combination of eggs with goat cheese and herbs, he even asked for the rosemary toast. He must have been very hungry, because as he sat watching me make his breakfast, rosemary toast and all,. 2 large eggs, beaten. 2 tbs crumbled goat cheese. 1 tsp herb de provence. 1 tsp fresh basil, chopped. Salt and pepper to taste.

Tuesday, August 4, 2015. I saw this on Facebook today, it looks delightful! 2 lbs frozen hash browns, thawed. 2 tbsp all-purpose flour. 1 1/2 tbsp salt (or more to taste). 1 tbsp ground black pepper. Brick of cheddar cheese, cut into small, rectangular cubes. Vegetable oil, for frying. Combine thawed hash browns, flour, salt, pepper, and eggs in a bowl. Let them cool a bit, then enjoy!
