Living to Eat while Eating to Live. Cooking Is My Cardio. 1 cup diced cooked chicken. 1 cup shredded cheese (cheddar or Mexican mix). 1/2 cup diced tomatoes. 1/4 cup chopped onions. 1/4 cup chopped fresh jalapeno. Mix together the chicken, cheese, tomatoes, onions, and jalapenos. Place one tortilla at a time on a medium hot skillet, and spoon a layer of the cheese mixture on one half of the tortilla. Serve immediately with a side of guacamole. December 15, 2013. 2 large rip avocados. 1/4 cup diced onions.
