It’s an easy exchange of 20,000 D to the dollar, so my budget is 400,000 D per day. Bus to Dien Bien Phu, Vietnam-. Breakfast of noodle soup-10,000 K. Interesting snack of crispy desiccated corn that I thought was quite good-18,000 D. Room with attached bathroom and pretty bed hangings-75,000 D. Bus to Hanoi-300,000 D.

So much world, so little time, even less money. What Am I Eating? October 9, 2012. One night in Luang Prabang, Brittany and I decided to get dinner at the night market. This was a fun and somewhat successful idea. But a lot of the time, we were not sure what we were eating. Check it out. Neither of us were brave enough to try to fish on a stick. It smelled a bit fishy…. There were many stalls where you get a plate for 10.000 Kip and can put as much food as you like on it. Fried green bean, delicious!

A support network for the children of a parent with cancer. January 21, 2014. Cauliflower “Oatmeal”. Here’s the recipe I used:. 1 Tbsp coconut oil. 1 cup cauliflower, riced. 1 cup coconut milk. 1 Tbsp raw honey. 2 tsp cinnamon (I added extra, I love cinnamon). Saute in coconut oil. 1 /2 pink Himalayan salt. 1 Tbsp chia seeds (optional, but creates a great texture). Toppings: bananas, walnuts, or whatever you’d like! Cut cauliflower into florets and “rice” it in a food processor. Add the sweet stuff!
