I forced myself to branch out this weekend as my husband cannot eat the same thing all time, unlike me! Thaw 1 bag frozen shrimp. Thaw 1 bag scallops (from Trader Joes). 1 canned pineapple chunks (in 100% juice). 1 bag of spinach. 1 large yellow bell pepper. 1 bunch of green onions. Once everything is done, combine and eat! Monday, February 28, 2011. I did the math and it turns out that my 60 day challenge.is almost over. Yikes! Jan 2nd was day 1, there are 31 days in January, however I stared on the 2nd, so 30 days. There are 28 days in February, today being the 28th. 30 28 = 58. 2 more days left. Also, I have to travel to Minnesota during the week of March 14th. Yupp, brrr. Monday, January 31, 2011. I almost forgot the ass kicking that was this weekend and my achievement! The workout on Saturday was 5 rounds: 400m run, 15 overhead squats (arms locked out overhead with 65 lbs on the bar) and 15 kettlebell swing. Normally I use the 32ish pound kettlebell because that is what is prescribed for women. However, coach Rich made Janessa and I use the 54 pound bell, the one Matt uses! Monday, May 24, 2010. This past weekend I taught my second cycle class and I am LOVING it! I had several people come up afterwards and thank me for a tough workout. I got thanked for making them work hard! Why all or nothing? It should be, I want start my healthy lifestyle right now! Teaching cycle classes has given me that next bit of encouragement and empowerment to become a healthier me. I feel so strong after I teach, like I could do anything!
