Chef Megan’s Story. 17 Feb, 2012. Welcome high altitude bakers and enthusiasts! As a pastry chef, I have experienced firsthand the challenges and struggles of baking at high altitude. It can be very discouraging. Baking is too enjoyable of an activity to be limited from those living above sea level. Adjusting for Altitude Guidelines. Here are the heavy-weights when it comes to adjusting:. I recommend starting with 1/4 teaspoon increase or decrease at a time. Use less flour if that appears to be the case.

Thanksgiving 2010 →. 2010/11/08 · 12:34 am. Stale like this bread that I turned into croutons to perch delicately atop this caesar salad accompaniment to a delicious french onion soup topped with more stale bread and some defrosted comte. Stale like this blog which at last update belonged to March and now belongs to November, having seen a late May marriage and no small part of business and bustle since. Via The New York Times. 3 cups all-purpose flour (we usually use 1 whole wheat, 2 white). The soup is...

Intro to Homebrewing | Acute Cuisine
https://acutecuisine.wordpress.com/intro-to-homebrewing
There are two ways to homebrew beer: all-grain and extract. All grain is my preferred method. It involves considerably more work and equipment, but it is cheaper and I find it more rewarding. In extract brewing, all the work of extracting sugar from grain has already been done by a manufacturer. Both methods make great beer! Key foreign words you didn’t know:. Looks like a thermometer, floats like a bobber, breaks like glass, and tells you how much sugar is dissolved in your liquid of choice. 8 Finish up...

Squash | Acute Cuisine

2010/03/23 · 10:06 pm. This is the first of several winter squash recipes that I’ve made over the last few weeks. The inspiration came from 101 Cookbooks and a few idle moments in the WinCo bulk aisle. See, Beth and I both have a tendency to taste new things. She found adzuki beans in the bulk bins- I typed their name into a couple favorite food blogs, and found a tasty looking recipe on 101 Cookbooks. A few tweaks later, I had a new favorite soup. 2 tbsp olive oil. 1 chipotle pepper, finely chopped.

Thanksgiving 2011 →. 2010/11/26 · 12:40 pm. Mmmm… winter holidays! This cranberry cider was Beth’s Thanksgiving invention- it’s simple and tasty at half cranberry juice, half sparkling cider, a shot of light rum and cranberries and maybe a cinnamon stick to garnish. We hosted my in-laws for Thanksgiving- we served up a 28 pound turkey (! To never cook turkey at less than 325. If you’re. A turkey, though, 225 is apparently just peachy. I did ours for 9 hours at 250, and it came out delicious. You are comm...

Christmas Dinner →. 2009/12/16 · 6:05 pm. I can’t really take credit for any part of this recipe, but it was so good that I have to share it. Beth was poking around the Smitten Kitchen and found this recipe for brussel sprouts. Since I was raised correctly, I already had an appreciation for brussel sprouts that many people never share, and I set about making this recipe as soon as possible. From Sunday Suppers at Locques. By way of Smitten Kitchen. 1 cup fresh bread crumbs. 2 tsp fresh thyme. Melt the bu...
