Meyer Lemon Pie with Gingersnap Crust. January 24, 2016. A Debbi adaptation from this Epicurious Key Lime Pie. Recipe, using the Meyer lemons from her parents' tree and less sugar and butter. The crust is made of pulverized ginger snap cookies instead of graham crackers and it is sooo good and relatively easy. We attempted a diamond design on the top with a stencil of our own making. We had edible glitter but it was a bust, so we sprinkled ginger snap crumbs on the stencil instead. 4 large egg yolks.

I recently picked up some hemp hearts and wanted to bake something with beets, so I returned to the protein puff framework and swapped out a few items. The results were FABULOUS and you can do a sweet version or a not-so-sweet version. What can I say, I seem to like fuschia-colored foods! 2 tbsp. coconut oil. 2 large egg whites. 1 tsp baking powder.
