I still consider it a comfort food. Cheap and yummy. 1 cup of shredded cheese (cheddar or other). 1 can mushroom soup. 1 can of tuna (water-packed). 1 small onion, chopped. 1/4 cup of chopped green pepper. 1 to 2 teaspoons of salt. 1 tablespoon margarine or butter. 2 level tablespoons of flour. 1 1/2 cups of milk. Serves 6 to 8.

This was a semi-regular hotdish in my family growing up. To be honest, it is not one of my personal favorites — I have a thing about rice with tomatoes — but there are plenty of people out there who are fans! 🙂 Top with shredded cheddar cheese at table. Cornbread makes a good side dish. 1 large onion, chopped. Serves 6 to 8.
