Cavolo Nero, Cannellini Beans and Chipotle. 1 tablespoon of olive oil. 1 large onion, chopped. 2 large cloves garlic, chopped. 250g chestnut mushrooms, chopped. 1 tin cannellini beans, drained. 1 bunch cavolo nero about 10 stalks. 250g vegetable stock I use Marigold bouillon. I like to serve this dish with a bulgur wheat risotto but you could also serve it with a pile of brown Basmati rice. June 15, 2016. Roasted Butternut and Beetroot with Balsamic Glaze.

Monthly Archives: May 2015. May 27, 2015. Quinoa with Griddled Courgettes, Mozzarella and Preserved Lemon. As I have said before when writing about quinoa, the mistake many people make is overcooking it. Once it has been in boiling water for too long it turns to mush (in my opinion) which may be great if you are making quinoa porridge but not so tasty otherwise. This recipe can either be served as a light lunch with a green salad on the side or you could serve it alongside a piece of grilled or baked fish.
