Preheat oven to 225°. Place 1/4 cup sugar in a small bowl. Scrape seeds from vanilla bean, and add seeds to sugar; discard bean. Stir well with a whisk. One 5-oz. raw boneless skinless lean chicken breast cutlet. 1 wedge The Laughing Cow Light Original Swiss cheese. 1 oz (about 3 slices) 97 - 98% fat-free ham slices. Salt and black pepper, to taste. Preheat oven to 350 degrees. Place chicken roll in a baking dish lined with foil and/or sprayed with nonstick spray, and then cover the baking dish with foil. No Potato potato salad (made with Cauliflower)—(Hungry Girl). 1 large head cauliflower, roughly chopped. 6 hard-boiled egg whites, chilled and chopped. 1/2 envelope ranch dressing/dip mix. 1 1/2 cups fat-free mayonnaise. 1/2 cup fat-free sour cream. 3 tbsp. Hellmann's/Best Foods Dijonnaise. 2 tbsp. fat-free non-dairy liquid creamer (like the one by Coffee-mate). 1 cup diced red onion. 2 celery stalks, diced. 1/4 cup chopped chives. 3 tbsp. seasoned rice vinegar. 1/4 tsp. salt.

Thursday, May 5, 2011. Strawberry Angel Food Cupcakes. One package Betty Crocker angel food cake mix. 1-1/4 C cold water. Pre-heat oven to 350 degrees and put rack in middle of oven. Beat cake mix and cold water in metal bowl on low speed for 30 seconds and then medium speed for one minute. Slice strawberries lengthwise and into several sections. Put liners in tins and put enough batter in each cupcake to cover the bottom of the mold. Bake for 25-30 minutes until batter starts to turn golden brown on top.

I've been eying Durangos for awhile now but just couldn't get myself to finance a new one for the required 15 years in order to have an acceptable payment. I found this used (2012) with 12,000 miles and had to jump on it! Love it so far. Its such a nice ride compared to the Jeep I traded in. Now I just want to add some chrome details to it.
