Haggie's Coffee Lab

I use this blog to capture my thoughts and assist me in the learning process. Often I record observations, findings and ideas that I subsequently learn are incorrect (all part of the learning process). Whilst I am happy to share such thoughts with anyone reading, I also advise caution in using them as any form of tutorial. With coffee, I will always have more to learn than I have to teach - Mike Haggerton (@HaggieBarista), proprietor of @HabitatCafe

Haggie's Coffee Lab: February 2013

http://haggieslab.blogspot.com/2013_02_01_archive.html

Saturday, 2 February 2013. This is a post I shouldn't write. My wife will kill me, considering how much time, effort and money we have invested on the UKBC path. Tsk This feedback should go through proper channels, but all feedback so far has been met with defensive barricades. Closed ears. More broken promises. One man can't make a difference against this particular agenda. Posted by Mike Haggerton. Saturday, February 02, 2013. Links to this post. Subscribe to: Posts (Atom). Obligatory Coffee Books Post.

Haggie's Coffee Lab: How To Taste Coffee

http://haggieslab.blogspot.com/2011/08/how-to-taste-coffee.html

Monday, 22 August 2011. How To Taste Coffee. That still makes me wince! I've knocked the following simple diagram up to share my thoughts on one possibe way for people such as myself, relatively new to tasting coffee, to improve their tasting abilities and make that tongue-to-brain connection. I could have made it more complex, more professional etc, but I think simple is good. If so, does the mouthfeel remind you of perhaps a rich, heavy wine such as a zinfandel? If wine isn't your thing then use someth...

Haggie's Coffee Lab: AeroPress, Hario Mini Mill Grinder, and Gold Cup Extraction

http://haggieslab.blogspot.com/2012/06/aeropress-hario-mini-mill-grinder-and.html

Thursday, 28 June 2012. AeroPress, Hario Mini Mill Grinder, and Gold Cup Extraction. At the time of writing this, the most-read post. When I wrote my previous post confounding factors got in the way, such as:. My inexperience with the AeroPress. Being new to the grinder. Having only a basic understanding of brewing (chemistry etc). And the biggest problem - having no frame of reference other than repetition, trial and error to guide my tasting towards an end result that seemed perhaps. Perhaps the grind ...

Haggie's Coffee Lab: Flexing The Brewing Control Chart (Part 1)

http://haggieslab.blogspot.com/2012/11/flexing-brewing-control-chart-part-1.html

Sunday, 18 November 2012. Flexing The Brewing Control Chart (Part 1). Some of the tastiest coffees I've ever brewed should have been awful. They should not have been good according to current brewing standards. I want to explore how this could be. I'm an advocate of Controlled Brewing. Using specific weights and measures, temperatures, times etc, and (importantly) taking a reading of the coffee's concentration (TDS) and extraction yield % after brewing. Why? What is the target though? I'm not a scientist...

Haggie's Wild Food: September 2011

http://haggieswildfood.blogspot.com/2011_09_01_archive.html

We like free wild mushrooms, berries, etc. Mmmm! Thursday, 8 September 2011. I've heard they are tasty, so it was great to stumble across my first big ring of Common Puffballs this week. You can only eat the young ones, but it's an easy test. the older ones turn yellow/brown inside and then explode in a 'poof' of dust! They were indeed ok to eat. texture's a bit freaky though. You just can't beat Ceps in my opinion, especially for breakfast with a great pourover coffee. Subscribe to: Posts (Atom).

Haggie's Wild Food: The Books We Are Using

http://haggieswildfood.blogspot.com/2011/08/books-we-are-using.html

We like free wild mushrooms, berries, etc. Mmmm! Wednesday, 10 August 2011. The Books We Are Using. On our first foray we were fairly overwhelmed and baffled by all the latin words, strange beards, and what seemed to be an impossibly large number of different species. It didn't seem our thing really, but we did enjoy eating the mushies we found so we went back the next week. On that second day out there were a lot less people (not a weirdy beardy in sight! It turned out they were Orange Birch Boletes, a ...

Haggie's Wild Food: Day 1. What's this blog all about?

http://haggieswildfood.blogspot.com/2011/08/day-1-whats-this-blog-all-about.html

We like free wild mushrooms, berries, etc. Mmmm! Tuesday, 9 August 2011. Day 1 What's this blog all about? We moved from London to Scotland this year. Since then we've been getting into country living. The latest thing is finding, identifying and eating wild food. It's fantastic! We're just starting and have a lot to learn, but it's amazing how quickly you can pick things up if you go out with people who know their stuff - and then follow it up with a little reading. We like free wild mushrooms, berries, etc. Mmmm! Sunday, 21 August 2011. Cep aka Porcini aka Penny Bun aka Breakfast! I'm banging on about mushrooms right now, but that's just because every day there are new beauties popping up. It only takes about a day for some of them to appear and grow to about 20cm tall with a big tasty cap. Today Jan and I went for a walk by the river up at The Fairy Knowe. http://haggieswildfood.blogspot.com/2011/08/theres-gold-in-them-there-hills.html

We like free wild mushrooms, berries, etc. Mmmm! Tuesday, 16 August 2011. There's 'gold' in them there hills. This morning Jan and I got in the car to take her to the airport (business trip). At the bottom of the drive I glanced left and spotted a gleaming patch of gold in amongst the moss. "Holy Moly! I exclaimed, or so Jan tells me cos I can't remember doing so! Jan was clearly a bit gutted that she'd be away in London, leaving me to scarf the lot. Subscribe to: Post Comments (Atom).

Haggie's Wild Food: Wild Strawberries

http://haggieswildfood.blogspot.com/2011/08/wild-strawberries.html

We like free wild mushrooms, berries, etc. Mmmm! Saturday, 20 August 2011. Lots if these around at the moment here in Aberfoyle. They are much smaller than the supermarket ones and actually taste completely different in my opinion. If you remember the sherbet-filled flying saucer sweets, their flesh has a similar crumbly texture and taste. Definitely feels like a guilty pleasure eating them rather than the healthy option it really is. Subscribe to: Post Comments (Atom). Haggies Coffehouse Cafe (FB page).

Haggie's Coffee Lab

Thursday, 11 December 2014. What is the driver for this development regarding aversion to baristas’ bare hands touching things? I presume it is hygiene, and I think I would be understandable for baristas who have not received training and qualifications in food safety and hygiene to assume that gloves would be better than bare hands. But this assumption would be false. Gloves have several disadvantages:. Posted by Mike Haggerton. Thursday, December 11, 2014. Links to this post. Thursday, 24 October 2013.
