For a bit more of a challenging recipe, but well worth the end result! 4 cod fillets, 5oz pieces. 2 lemons, zest removed. 1 T extra virgin olive oil. 4 cups mustard greens. 8-10 shiitake mushrooms, halved, stems removed. 1lb broccolini, cut into 2-3 pieces. Getting back to your ROOTS! Archive June, 2011. Try out this exciting salad to put a new twist on those greens! 6 tbsp dried green lentils (2 cups cooked). Cup roasted bell peppers, chopped. Cup finely minced onion. 1 medium garlic clove, pressed. 2 tbsp basil, chopped. Cup coarsely chopped walnut (nut allergy). 1 tbsp balsamic vinegar. 2 tsp fresh lemon juice. 1 tbsp extra virgin olive oil. 1 handful (1 cup) young dandelion leaves, chopped. Add the lentils and gently stir to combine. 1 cup brown rice.
