Monday, July 20, 2015. How quickly they forget! The one who reached out. That one who needed help. Soon after, they take it, suck the wind out. That help that they took. Now standing on their own. Doing the thing they were struggling about. They soon forget, who they were with when they started out. They were desperate, holding on, desperate for help. Tuesday, April 28, 2015. Daily Post: Counting Crows. My daughter and I were talking during our walk about the impacts we are contributing to our environment. I was thinking back on my many conversations, and once they heard what I was up to, they become inspired and say, "You should run for office! Today, as I conversed with my daughter, I put myself in a politicians shoes, pretending I was the president. My question is, why wouldn't one look at the long-term affects that are impacting our environment?

Recipe for today: Warm Lentil Salad Sweet Potato and Olives. 2 Medium sweet potatoes, peeled and diced (into approx 1" pieces). 3 Tbsp Olive oil, divided. 1 Medium onion, finely chopped. 2 Cloves of garlic, minced. 1-1/2 C Puy OR Green lentils. Few sprigs of fresh thyme OR 1/2 tsp dried thyme. 3 Tbsp Red wine vinegar. Heaping 1/2 C Marinated olives. 2 Tbsp Chopped parsley. Salt and Pepper, to taste. Sunday, September 28, 2014.
