Nothing screams Spring like lemon bars! I tried this recipe, and of course it was amazing. The key is fresh lemon. They don't really set properly if there isn't fresh lemon. 1/2 pound unsalted butter, at room temperature. 1/2 cup granulated sugar. 6 extra-large eggs at room temperature. 3 cups granulated sugar. Preheat oven to 350*.

Add koolaid powder from one packet, and one cup of sugar to a 2 or 4 cup measuring cup. Add water to the mixture until it reaches the 2 cup line (so it won't be 2 cups of water plus the ingredients, it all adds up to 2 cups). Stir well!
