You don't want something too flimsy, but you don't want something that isn't going to work in the panini maker either. I went with the Burlington-made Klinger's Bread. My panini was just delightful! I bang into walls, I trip often, and I tend to cut my legs in the shower on a regular basis. So adhesive bandages are a necessity in my household. Anyway, moving on from that, I use organic peanut butter, organic jelly and then typically my favorite bread, Ezekiel 4:9 Organic Sprouted Whole Grain Bread- which is kind of expensive, but the most natural supermarket bread I can find. If I don't feel like spending $6 on a loaf, I'll get Earth Grains.
