I suppose this is not a real confit but it is similar: peeled garlic cloves slowly cooked in olive oil until soft. This would be delicious with duck fat or butter instead of the olive oil. Use the garlic confit in most any savory dish to enrich the flavor. Large container of peeled garlic cloves (as sold at CostCo or ,in a smaller version, at Trader Joe's). The garden is not doing too well. Starting about 2 weeks ago, we had 9 days in a row over 110. Considering that an average summer only has 10 days over 110, that was a brutal start to the hot season. Meanwhile, our (NEW! A lot of plants have died. All the cucumbers, most of the tomatoes and the peppers except those in deep shade.
