Monday, May 28, 2007. Yes, chickens made entirely of chocolate! This week our assignment was to make a chocolate show piece made entirely from chocolate, both cast chocolate pieces and modeling chocolate, which is chocolate with corn syrup added, which makes it pliable. Like play-dough. The chocolate modeling pieces are the feet, beaks, combs and flowers. The wings are piped chocolate and all of the other pieces are cast- the bodies are hollow spheres. Tuesday, January 30, 2007. The ovens are full. Indeed the ovens are full and yielding lots of good, fresh bread! Above are baguettes baking in a rotating rack oven, which produces very even baking as it rotates the product as it bakes. We use these in baking most of our breads. Sunday, November 26, 2006. A trip to the Ferry Building Farmers Market. I used to get so excited for May in Chicago, when the farmers markets would begin to pop up around the city, but towards the end of the season the pickin's were slim and all came to an end in the fall. So, I was stoked to find out that our local Oakland farmers market, walking distance away on Grand Avenue, was a year round event, happening every Saturday throughout the year! Sunday, December 17, 2006. Making a layered cake. This is the final result of the cake. We were required to decorate as shown, and I am not entirely crazy about the design especially since the decorations don't really reflect the flavors in the cake. This is a slice from the cake. It is always slicing the cake to reveal how well, or how terribly the layering went! The owners, couple Elizabeth Prueitt and Chad Robertson, were recently nominated for James Beard Best Pastry Chef, and are very talented. Thursday, June 07, 2007. I had so much fun making the marzipan characters we had to make for our marzipan modeling assignment. These character that I made were based off of those in the book Marzipan Animals by Fredy Eggenschwiler. Which I like because it has some of the more modern. Designs and I would love to own, but is impossible to find in the US! There is so much potential for these characters, which could be sold individually. Wrapped in plastic bags- they do taste really good, but I love marzipan!
