Oat risotto with peas and pecorino. I first discovered risotto when I was 8 or 9 and became immediately infatuated with it. It was one of the first “adult” dishes that I could really get on board with and ordering it made me feel sophisticated. I would order it every time it appeared on a menu, with tomatoes, lobster, peas, even mushrooms, which I would have never allowed near me in any other form. Oat risotto with peas and pecorino. Adapted from Food and Wine. Serves 4 as a main or 6 as a side.
