Often it has also been marinated in something, in Andalucía it’s typically a spice mix used to make Pinchitos Morunos (Moorish Kebabs) little skewers of meat, usually pork. We’ve eaten chicken (reared by a pal who gifted us two hefty chicken thighs and drumsticks) cooked in one of our cazuelas with peppers, onions, garlic, olive oil and wine.
