February 28, 2014. Mexican food is popular for its rustic and spicy flavor. Here I am sharing my Spicy Mexican Rice Recipe, very tasty and full of colors. 1/2 cup Black chickpeas, Boiled. 2 tbsp. Olive Oil. Medium-sized Red Bell pepper, thinly sliced. 2 Jalapeño, chopped finely. 2 cups vegetable stocks or water. 1 tsp Cayenne Pepper paste. 1 tsp Cumin powder. Enjoy this with hot cup of tea or coffee. 2cups Yellow lentil, soaked. 2tbsp roasted chick pea powder. 1 Green chili, finely chopped. 1tsp Red chili powder. 2 tbsp. coriander leaves, finely chopped. The whole kitchen is filled with the aroma of ‘cheese’ while they're baking. 1 cup Daiya cheddar style shreds. 4 tbsp Earth Balance (or other vegan ‘butter’). 1/2 tsp salt (optional). 12-24 pimento-stuffed green olives, drained. Mix the Daiya into the Earth Balance, then stir in the flour, water, salt and paprika to combine thoroughly.
