Cup shredded Cheddar cheese, Monterey Jack cheese,or queso fresco. 2 teaspoons vegetable oil. Heat oven to 425 F. Bone-in chicken adds a ton of flavor this Puerto Rican-style rice dish. 3 tablespoons canola oil. 2 pounds chicken legs or thighs. 1 small white onion, diced. 1/4 cup sliced green olives. 12 ounces tomato sauce. 1/2 cup Puerto Rican Sofrito. 2 cups uncooked rice.
