Scallion and Ginger Spiced Chicken. 4 boneless, skinless chicken breasts. 1 1/2 teaspoons olive oil. 1/4 cup minced scallion whites. 3 minced garlic cloves. 1 tablespoon minced fresh ginger. 3/4 cup reduced-sodium chicken broth. 1/3 cup rice wine vinegar. 2 tablespoons hoisin sauce. Soy sauce to taste.

Chicken and Rice Casserole. 4 skinless, bone-in chicken breast halves. 2 stalks celery, cut into thirds. 1 cup cooked rice. 6 ounces sour cream. 2 (105 ounce) cans condensed cream of chicken soup. 1/4 teaspoon celery salt. 1/8 teaspoon onion powder. 1/4 teaspoon garlic powder. Salt and pepper to taste.
