They have a white chewy corn tortilla that are also flexible. 2 Tbsp canola oil. 2 onions, halved and sliced thin - I only use one. 3 green bell peppers, stemmed, seeded, and cut into matchsticks. 3 garlic cloves, minced. 3 Tbsp fresh lime juice. 2 (15-ounce) can pinto beans - keep canning liquid. 1 Tbsp finely chopped jarred pickled jalapenos, plus 4 Tbsp jalapeno brine.

Combine mashed peaches, sugar, cornstarch, and water in saucepan. Cook stirring constantly, until thick (about 5 minutes). Remove from heat; add butter and almond extract. Cool slightly pour over peaches in pastry shell. Chill and serve with whipped cream if desired. 1 stick of unsalted butter at room temperature.
