Here is my creation:. 2 lbs tomatoes*, peeled, seeds out but juices saved. 2 T olive oil. 1 medium red onion* diced. 1 garlic clove* (or more but my particular clove was gigantic! Crushed red pepper to taste. Salt and Pepper to taste. Red wine vinegar to taste. Fresh basil* to taste. 2 Heat olive oil, add red onion and cook until soft. Add chopped garlic and cook for a few minutes more. Season mixture with red pepper, salt and pepper.

This week's box from Bistro Farm delivered more potatoes. Last week I made a corn and potato soup. Sarah was working at Mondo's and she told me that the sauce from the rigatoni and broccoli that I loved so much was actually a half and half mix of pesto and salsa. I have made that sauce so many times, using different ingredients and playing around with the ratio of pesto to salsa but I think the original is still my favorite. Pesto - I had homemade cubes but store bought is good too.

I only had a handful of the ingredients on hand so I used that recipe as a guide. My salad calls for walnuts instead of pistachios and quinoa substituted for half the lentils. This salad can be eaten slightly warmed or cold out of the fridge. Here's what you need:. Onions, diced - 1/2 small. Garlic, minced - 2 or 3 cloves. Quinoa, cooked - 1 cup.
