When my Mum-in-law told me about these ingredients my nieces used. Semi-dried Tomatoes, Kalamata Olives and Lemon Juice. I decided to try this and to my delight the Cous Cous was delicious. 1 cup of cous cous. 100 gr semi-dried tomatoes. 100 gr Kalamata olives. Mix in Olives and Tomatoes, then the Lemon Juice. I pick our mangoes as the first ones start to ripen. This year it was a late season in The Burdekin/Townsville, so I assumed our mangos would be a little late in maturing. When I put mixture into patty papers I thought it was going to be a dismal failure, but I was.
