Tuesday, April 17, 2012. 3 years ago right now, I was in labor. My water had broke, and I was desperately waiting for some sign of SERIOUS, PAINFUL labor. Many hours, lots of pitocin, and a miracle dilation later, my little. He was 7 lbs, 13 oz. 21 inches long. And wow could he scream! I'll never forget the nurse handing him to me for the first time, and I was a mess, because he was all hooked up to tubes and oxygen, and he was so little, and he was mine. Friday, September 23, 2011. The final {40th} day of Nathan's fast! Nathan has officially accomplished 40 days of his juice fast! He looks amA.Z.I.N.G. He's consumed only water and juice (and the occasional prune for obvious reasons). And guess how much weight he's lost? If I only could lose my leftover baby jiggle, it would be like we were newly married again. Except better, because now we have adorable children, and we have so much more love for each other. Monday, March 7, 2011. Apple Spinach Salad with Poppyseed Vinaigrette. This is my companion dish to the Fiesta Pineapple Talipia. 3 large handfuls of spinach. Half an apple, chopped. 1/4 c dried cranberries. 1/4 slivered toasted almonds. Layer toppings over spinach. 1/2 c Extra virgin olive oil. 1/3 c apple cider vinegar. 1 t apple juice concentrate. 1 T poppy seeds. Combine in airtight container, and shake to blend ingredients. Drizzle over salad. Labels: Baking and Cooking. 2 T Olive Oil. 3 T lime juice.
