I never enter the various blog hops that appear around the Internet from time to time, but when Mel @ the Larson Lingo started one involving soup, I knew I had to participate. This is my family's favorite soup and "go to" recipe when hosting a large number of people. Monday, April 4, 2011. When I picked Gabe up from school today, the tornado sirens went off so we had to wait a few minutes. During those few minutes, Gabe proceeded to throw himself on the ground and try and drag me away. I should've known that was the start of a downward spiral, but I was hoping with some food his mood would improve. We just got home and I put Gabe down right away. He screamed and hit. First I sliced an eggplant about 1/2 an inch thick and drizzled lightly with olive oil and S&P. Then I placed the slices on a baking sheet lined with foil.
