National Garlic Day: Roasted Garlic, Red Pepper, and Mushroom Quinoa. Roasted Garlic, Red Pepper, and Mushroom Quinoa. Did you know that April 19th was National Garlic Day? Me neither. And yet, there I was, making a recipe infused with a whole bunch o’ garlic. Literally an entire head of garlic. Mmm, mmmm. What’s nice about this recipe is that it uses very few ingredients: quinoa, olive oil, mushrooms, red pepper, and of course, garlic. I cooked and stirred, cooked and stirred until the veggies were soft.
