Kale Orzo Salad and Lentil Sloppy Joe’s. Dallas will be in the rear view next week. Using creativity to slim down the cabinet inventory, I surprised myself even! The lentils and mushrooms give hearty strong flavor, letting the kale be less intense but nutrient packed. Tear the kale into pieces, removing the stems. Chop the bell pepper very fine. (I used the Ninja). Fresh tomato would have worked just as well, but I had a can of Fire Roasted Tomatoes on hand. This is a quick recipe! 1 lb cooked lentils.

July 5, 2014. This year has been one of the busiest for me. In January I started a full time job at a local cafe, and a trainee-ship through the job. Soon after this I sent my forms into AustSwim so they could sign me off as a qualified Teacher of Swimming and Water Safety. Then in February I started Certificate IV in Business Administration! Throughout the year I have been driving, working on getting down the 120 hours of experience necessary to have before taking the P plate test. October 30, 2013.
