A friend recently cooked yucca fries and I LOVED them. I decided I had to try making them myself. I got my yucca in the freezer section of the grocery store (it was in the section labeled "ethnic foods"). It came pre-peeled and cut into large chunks. like this:. The sun is shining, the skies are Carolina blue (perhaps in honor of UNC legend Dean Smith. Who passed away last night. RIP.). And I think it's just about the most beautiful day I've seen in a long time.
