Monday, November 23, 2009. This little sweet potatoe is filled with Vitamin A and C, maganese,fibre and beta carotene. They contain antioxidants and are anti-infammatory. Sometimes you don't have the time to stuff every jumbo pasta shell witha spinach and cheese mixture so this is an easy dish with all the great stuff! 2 cups spinach leaves chopped and steamed. Tomato sauce (olive oil, garlic,salt.however you like it). Ricotta cheese (some nutmeg mixed in). Cook the pasta, steam the spinach and add the spinach with tomato sauce-sprinkle some parmesan cheese and enjoy! Living My Best Life. Living My Best Life.

Wednesday, November 25, 2009. Quinoa.grain of the Goddess! This is my favorite quinoa w/ raw vegetable dish or salad. Rinse the quinoa in warm water for about 15 minutes and then rinse and strain. Boil 2 cups of water for 3/4 cup quinoa, add quinoa and reduce heat on low and close lid and let cook about 15 minutes. Cut up some veggies:. Red peppers, green onions,celery,mushrooms and zucchini.whatever you have will do. I add fresh parsley, garlic, herbamare, olive oil. As a salad just add lemon juice!

Monday, August 31, 2009. Turn up the Heat! This is a comfort food for me when it is rainy and cold outside. It's a healthier version of Gumbo, a Louisiana favorite! I use shrimp and turkey sausage. Chopped okra, celery, onions, red chili peppers or dried. Beef stock and water. Cayenne powder or any hot sauce you like. Add extra hot sauce if you like! Living My Best Life. Anyways Polenta is a great comfort food anytime of the year…so basic but anything goes in the mix…tomato sauce, veggies any herbs etc. Here cornmeal is used for polenta, it’s quite easy but you must keep stirring the polenta to not get a grainy texture. 250 g instant corn meal. 2 handfuls Parmesan grated. I got this recipe from trying to change it up a little bit…my son loves chili and he loves chocolate so I thought of trying this recipe for him-he has no idea! 2 tsp coriander seeds. 2 large dried chillies. 2 sticks of celery chopped. 2 cloves of garlic. 2 tsp sunflower oil. 2 tins plum tomatoes (or use fresh). 1 tin haricot beans. 1 tin black eyed beans. 1 tin aduki beans. 1 tin kidney beans.

I enjoy them roasted with sliced onions, olive oil and and lightly seasoned with herbamare in the oven until tender.
