You can't (unless they have a gluten or wheat allergy.) It's like trying to beat Prince and the Revolution in a game of basketball. There are great bagel shops in NYC, but there is nothing like a homemade bagel to start the day.or for lunch.or dinner. Plain bagels. Not perfectly pretty, but delicious. 6-7 cups all-purpose flour.
