Doing new things and being a better me…. Chicken and Sweet Potato Stew. Baby it’s cold outside. And that calls for crockpot time! Not the prettiest of pics but what did you expect stew to look like? It’s orange and it’s yummy. Chicken and Sweet Potato Stew (adapted from the cookbook that came with my crockpot). 4 boneless skinless chicken breasts cut into bite-size pieces. 2 medium sweet potatoes, peeled and cubed. 2 medium Yukon gold potatoes, peeled and cubed. 1 – 28oz can crushed tomatoes.

Spinach artichoke dip (adapted from my vitamix cookbook). 1 slice lemon, peeled and seeded. 1 large package of fresh spinach. A pinch of salt and pepper. Cup canned artichokes, drained. Place all ingredients except artichoke hearts in vita-mix. Turn it on (variable 1, increase to 4). Blend, blend, blend (took me a while to get all that spinach in there and blended up). For breakfast I had a scrambled egg with red beans and a pre-breakfast glass of ice water. Around lunch time I had the chips and dip I had been craving. Yum. Journey to a healthier me in 2011. My 4 Hour Body Blog. I’m pretty excited about how this is going so far. I’m on Day 4 and when I weighed this morning I was down 3.4 lbs. Yay! I think too few calories along with not enough water was also the cause of my Day1 headache. I will start photographing my meals, but for the moment I will just log what I’ve had so far today. (I will edit this to add my dinner later.). 500 ml ice water ( a little hard to stomach when it’s 12 degrees out. Brrr.). 1 c green beans.

I think I need to do some tweaking somewhere, but just not sure where. I’ve basically been eating the same few meals that have been posted here (along with pics). If someone sees something that they think might be sabotaging me, please let me know. The salad was good, if a little dull with no dressing. I feel like the Michelin man. Very puffy.
