A girl in love with her boy}. Monday, November 29, 2010. Parmesan Chicken and a Caprese Salad. Tonight was Italian. I love cooking Italian food because it transports me back to the Island of Capri, one of my favorite spots Doug and I stopped at in Italy. One night while on Capri we got dressed up in the only fancy outfits we had {we were backpacking for 2 months and that was all we had room for, one fancy outfit! Cut thawed chicken breast lengthwise in half. Roll in shredded parmesan. Roll in bread crumbs.
