Tuesday, December 2, 2014. Potato Leek Soup with a twist. I'm notorious for not following recipes. I spend most of my time in the kitchen experimenting and trying new things. Last night I decided to use up some leeks and potatoes to make a simple soup that has been a staple in our home for years, but I spiced it up a little. 1 red pepper chopped. 1/2 red onion diced. 3 medium leeks sliced. 4 cloves garlic minced. 6 cups veggie broth. Approx 2lbs. white potatoes cubed (no need to peel). Curry powder (1 Tb).
