Light Dinner – Quinoa Upma and Summer Salad with Buttermilk Dressing. 1 tsp mustard seeds. 1 cup finely chopped onion. 1 tsp split urad dal (optional). 1 tsp chana dal (optional). 1/4 cup broken cashew pieces or peanuts (optional). 2 green chillies, slit lengthwise (optional). 1 cup small diced vegetables like peas, carrots, beans and cauliflower. 1/4 cup chopped fresh cilantro (optional). Summer Salad with Buttermilk Dressing. 1 tsp Dijon mustard. 1/4 cup extra virgin olive oil. 1/2 cup chopped fennel.
