Sunday, December 9, 2007. The meat is succulent, tender and very juicy. Catfish is an excellent source of selenium, vitamin B12, potassium and niacin. Here’s a very basic catfish recipe from my mom. 1 kg fresh whole catfish, cleaned and washed with some lemon/tamarind juice and salt. 4 tbsp corn flour. 1 tbsp turmeric powder. 1 tsp lemon/lime/tamarind juice. 189; tbsp salt. Tuesday, November 27, 2007. 2 medium whole chickens, trim off the fats, cleaned and washed. A few sprigs spring onions. A few sprigs chinese celery. Fresh ginger, the size of your thumb. 1 garlic bulb, crushed. Celery, 5-6 pieces, chopped. Carrots, peeled and roughly chopped. 1 large leek, split, clean and chopped. 1 tbsp Chinese black vinegar/any wine vinegar will do. 1 onion, chopped. 2 1/2 litres water. 3-4 pieces whole star anise. 189; teaspoon freshly ground black peppercorn. A pinch of pepper.

Sunday, December 2, 2007. Stir-fry Blackpepper Beef With Oyster Sauce. This is one of my husband’s favourite dishes; you can also substitute the beef with large tiger prawns or chicken pieces. 500g premium beef, sliced thinly. 2 red chillies, deseeded and slit lengthwise. 1 large green capsicum pepper. 1 carrot, sliced thinly. 3 dried shiitake mushrooms, soaked till soft and sliced thinly. 1 large red tomato, deseeded and quartered. A pinch of pepper. 1 large onion, halved and sliced. 3 tbsp garlic oil.
