My latest pumpkin recipe has been delicious pumpkin pancakes as showcased on Joy the Baker's Blog. Joy knows her stuff - if you haven't already, you need to check out her blog. These blueberry-lemon-ricotta pancakes had been on my "to do" list for a while so I was happy to finally give them a try. They were extremely light and sweet, almost like angel food cake.
