RePublic Brewpub: Underqualified
http://republicbrewpub.blogspot.com/2009/10/underqualified.html
Tuesday, October 20, 2009. Despite having never worked in a commercial kitchen, I'm now a state-certified food manager. I love bureaucracy. My certification expires in September of 2014, so I have plenty of time to reinvent myself as the guy who fires you for doing lines on the prep table. Hmmmmmmm What if I wipe it up with some raw chicken. October 23, 2009 at 2:22 PM. Ahhh, whats the fun of being a cook if you cant do a couple bumps now and then? November 9, 2009 at 10:16 AM. RePublic Brewpub: September 2009
http://republicbrewpub.blogspot.com/2009_09_01_archive.html
Thursday, September 24, 2009. For applying an all-malt philosophy to British beer recipes. Not knowing where to buy British brewing sugars, I've been using Belgian Dark Candi Syrup. Sunday, September 20, 2009. My first attempt at brewing with cherries - a 5-gallon batch of cherry porter - was slightly disappointing. Here's what I did:. Fermented the base beer for four days. Mixed 10 lbs of cherries with enough water to cover the fruit. Mashed the cherries with a giant perforated spoon. If you accept faxe...

RePublic Brewpub: Assembly Hearing = Meh
http://republicbrewpub.blogspot.com/2009/10/assembly-hearing-meh.html
Tuesday, October 13, 2009. Assembly Hearing = Meh. Today's hearing on AB287 pretty much went like this:. Proponents: alcohol abuse, drunk driving and underage drinking cause a lot of problems in Wisconsin. We support a beer tax increase so law enforcement and treatment projects can be better-funded. Opponents: raising the beer tax will result in job losses, and potential business closures, in the brewing and related retail industries which are vital to Wisconsin's economic health. Monday, October 26, 2009. Beat to the Brewpub Bill. After a year and ten months of working full-time to open a brewpub, I'm a little jealous that the owners of Vintage. Department of Revenue form). I'm sort of glad that RePublic won't be setting the precedent on how the law is enforced. Subscribe to: Post Comments (Atom). RePublic Brewpub: I Need a Job
http://republicbrewpub.blogspot.com/2009/11/i-need-job.html
Wednesday, November 4, 2009. I Need a Job. Hang in there man, just a tight spot youll laugh at later on. Keep on keepin on. November 5, 2009 at 8:11 AM. Ive been struggling with the balance of my full-time job (not to mention parenting and the rest of life) and work on developing the brewery plan. Some days, it seems easy. Some days, I wish an angel investor would give me money just to work on the development full-time. November 6, 2009 at 12:42 PM. November 6, 2009 at 1:14 PM. November 7, 2009 at 8:48 AM.

RePublic Brewpub: July 2009
http://republicbrewpub.blogspot.com/2009_07_01_archive.html
Wednesday, July 22, 2009. Session Beers Are Only Part of the Plan. Between many meetings and occupancy negotiations, I was able to sneak in a brewday last week. The beer - a massively strong blond farmhouse ale for my brother's wedding anniversary - is still fermenting at a moderate pace. If the beer turns out to my liking, i.e. dry as hell with subtle saison-like flavors, I may use it as the base of my Grand Cru. Here are some pictures of the brewing process. A 11-gallon yeast starter:. Yeast vs. pH.

RePublic Brewpub: November 2009
http://republicbrewpub.blogspot.com/2009_11_01_archive.html
Saturday, November 21, 2009. Business Hours are Over! Reducing the structural changes to the ACME building and replacing the full kitchen with cold appetizers to reduce the total project cost. Relocating to the former Blue Lagoon building to reduce the total project cost, allow us to have a full kitchen and provide an incentive for the Bank of Sun Prairie to loan us money (they own the building, which is now completely vacant). Unless I think of some wise things to say over the next few days, this will p...

RePublic Brewpub: January 2009
http://republicbrewpub.blogspot.com/2009_01_01_archive.html
Thursday, January 29, 2009. Recently asked us if we're interested in serving our beer at their annual craft beer fundraiser, FestivAle. We'd love to, but we're not sure about the legality of it. Regardless of whether or not we end up participating, you should check it out. It sounds like a lot of fun, it's for a great cause, and being at the High Noon. For a non-musical event should be pretty surreal. Friday, January 23, 2009. Add music or videos to the page (unless you're a band). I'm very regimented wh...
