Chicken and Peanut Stew with Butternut Squash and Kale. Prep Time: 1 hour. Slow Cooker Time: 4 hours. Stovetop Time: 30 minutes. 1/2 teaspoons ground ginger.

Curried Chicken with Ginger, Mango and Lime. 3 pounds bone-in, skinless chicken thighs (about 9). I used boneless thighs instead. 1 teaspoon curry powder. 2 teaspoons coarse salt, divided. 25 grinds black pepper, divided. 3 tablespoons vegetable oil, divided. 1 cups finely chopped red bell peppers (about 1 peppers).
