There are many good naan recipes out there, but I really like this one, very slightly adapted from the ever-awesome Serious Eats blog by The Food Lab. 22 ounces (about 4 c.) bread flour. 025 ounces (1 packet, about 2 tsp.) instant or rapid rise yeast. 044 ounces salt (about 2.5 tsp.) salt. 08 ounces (about 2 Tbsp.) sugar. 14 ounces (about 1.75 c.) full fat yogurt or whole milk. 1 stick butter, melted.

Saturday, January 7, 2017. 2 pounds boneless pork (or 2 pounds boneless, skinless chicken if making chicken vindaloo). 1/4 c white vinegar. Masala (for best results, toast and then grind whole spices, then mix with powdered spices):. 6 tsp coriander seeds. 1 tsp cumin seeds (use 2 tsp. for chicken vindaloo). 20 black peppercorns (or 1/2 tsp. ground pepper). 3/4" cinnamon stick (or 1/8 tsp. ground cinnamon). 1/4 c canola oil.

Monday, January 9, 2017. 2 c all-purpose flour. 1/2 tsp. salt. 1/3 c canola oil. 1/2 c water, as needed. 2 medium potatoes, peeled and diced into 1/4" cubes (about 2 c.). 1 tsp cumin seeds. 1/4 c canola oil. 1 c finely chopped onion (or 1 Tbsp. onion powder). 2 tsp minced ginger. 1/2 tsp. minced green chili (serrano, Thai, or jalapeño) (optional). 1 tsp ground coriander. 1/2 tsp. garam masala. 1/8 tsp. cayenne. 1 c frozen peas.
