Wash and chopped all veggies. Layer each ingredient on top of lettuce – no specific order. Pour desired amount of dressing on top. Toss and let sit for about 30 min. Frito salad is a wonderful compliment to any cookout or BBQ. The combination of the cheese, Fritos and Catalina dressing with the veggies is great.

Olive Oil, enough to lightly cover skillet. 1 pkg white mushrooms, cleaned and sliced. 1/2 - 3/4 cup dried cranberries. 2 Tbs thyme, finely chopped. Salt / pepper to taste. Cook rice as directed using chicken stock in place of water. Toss sliced mushrooms in and let brown on both sides.

Ronald Reagan's Pumpkin Pecan Pie.doc. 2 cups canned pumpkin (or fresh). 1/2 cup dark corn syrup. 1 tsp vanilla extract. 1/2 tsp. cinnamon. 1/2 tsp. salt. 1 unbaked pie crust. 1 cup pecans, chopped. Beat eggs in mixing bowl for 30 sec. Add pumpkin, sugar, corn syrup, vanilla extract, cinnamon and salt. Mix until well blended. Let cool an hour.

Pour sauce into a large bowl, and add shredded chicken along with shredded cheddar cheese. Mix well.

Submitted by mttadmin on Sun, 02/05/2012 - 16:24. 1 gal Blue Bell Vanilla ice cream. 1 can Pumpkin any brand. 25-30 Ginger Snap cookies crushed finely. 1 container Cool Whip. 4 Tbsp. butter. 1 2 tsp. cinnamon. 1 - 2 cups chopped pecans. Saute the crushed Ginger Snaps in 4 Tbs. butter – this is your crust. Pour into a 9 x 13 baking dish and cool in freezer for 15-20 min. While the crust is cooling, pour softened ice cream into a large mixing bowl.

Dept Store Cookies.doc. 2 cups butter, softened (4 sticks). 2 cups brown sugar. 5 cups old fashioned oats. 2 tsp baking powder. 2 tsp baking soda. 2 cups chopped pecans. 2 cups semi-sweet chocolate chips. Cream together first 5 ingredients in a mixer. Fold in flour, oats, baking powder and baking soda. Mix well. Gently add pecans and chocolate chips and blend together. Cover and refrigerate for 2 - 3 hours.
