We started our trip staying at Tabacon resort, near Arenal volcano. This place has to be as close to Heaven on Earth as possible. It was so incredibly beautiful and peaceful. Trying to find my joie de vivre… and capturing it on film. Back to my main blog. Ru and I met one of my dearest friends in the lovely Shenandoah Valley for some relaxing time in the country. It was a weekend that we talked about for at least a year. We tried and tried and tried to find a weekend that worked for everyone. And, on the Monday before, we found a last minute cabin for the weekend, and headed to the mountains. Beautiful farm and beautiful trees. One more of my pretty Eli. Always wanting to play.

Finding my joie de vivre…. through food! Back to my main blog. Per Russell’s request, I tried out a new recipe. He deserves a new medal for suggesting this. I think this takes the prize for my favorite pie – and that’s saying a lot. If you plan to make this, be sure to read about my trials with meringue. First if you haven’t made it before! 1 box vanilla wafers. 1/2 cup butter, melted. 2 large bananas, sliced. 6 eggs, divided. 1/2 cup sugar 3/4 cup sugar. 1/3 cup all-purpose flour. 7 Bake for 12 minutes.
