May 24, 2010. Pork Chops with Figs and Chipoltle. One of my favorite activities is cooking. I enjoy making classic dishes but what I really love to do is invent new ones. My 93 year old mother-in-law has a mature fig tree outside her kitchen window. It isn’t much to look at but the scrawny little thing bears lots of juicy fruit. When I ask her why the plant does so well she replies (with total seriousness). Let’s sit by the window, I suggest and we’ll see if we can help the production! 8 large ripe figs.
