Bread and Bun Coolers. The core temperature of Bread or rolls are cooled for 95ºC to 30ºC, within a high humidity environment, thus reducing the moisture loss due to evaporation. On a 700g loaf of bread we can save up to 18g per loaf, and on a 80g bun we can save up to 2g per bun. The unit will cool bread within a 90min period and bun will be cooled within 30minutes. This ensures that the product has maintained the highest moisture content before being packed at the correct temperature.

What is a Retard Prover? Retard proving is a process where by, already formed dough is chilled to a temperature of 2ºC and 85% relative humidity. It is then kept at this temperature until the programmed time for the temperature to rise sets in. At 2ºC yeast activity is inhibited. The temperature gently rises to your required temperature /- 42ºC according to the programmed time. The slow rise of temperature is to protect the dough. Once the temperature starts rising the proving process begins.
